I run a similar backup process here for Exchange 5.5.  But be aware, NT
Backup is not the best backup utility for Exchange...   There are known
issues with it.
 
I have a script that stops all Exchange services at 3 am until 5 am.  During
that time, I schedule my backup (via Archserve) to backup the stores to
another disk location and backup the stores onto tape.  This works very well
for me.
 
With your small org, you would not have to stop the services for as long as
I do.  I have over 1500 mailboxes and 2 hours is more than enough time.
