New office, dual-homed email domain

Hi,

Looking for some advice on an exchange setup.

We are setting up a new office with about 70 staff, called SYD-2. 
The topology of the current network is as follows:


Internet -- MEL (head Office) 
                 |      |
                BNE     SYD-1

Where MEL, BNE and SYD-1 are on a WAN with all traffic to the internet
via MEL, and mail hosted in MEL using exchange.

The new office, SYD-2, will not be part of the WAN for about six months,
instead all connections to it will be via the internet.

SYD-2 ---- Internet -- MEL (head Office) 
                                 |      |
                                BNE     SYD-1

Mail for the domain, @syd-2.com, is currently hosted on the sendmail box
at SYD-2.
We will be installing Windows 2003 and Exchange 2003 soon.

Staff in MEL, BNE and SYD-1 will also need to send and receive mail with
the domain name @syd-2.com, however, this may cause problems for systems
that use Reverse DNS as a check.

What would be the best way to implement exchange to allow mail sent to
@syd-2.com to arrive at one server (can be either MEL or SYD-2)but have
staff send from either server (MEL or SYD-2), allowing for Reverse DNS
queries from recipient servers, as well as retrieve email?

We can set up site-to-site VPN's via the internet.
If we can, we could set up the new server at SYD-2 to be part of the
company AD domain, communicating with the PDC via the VPN.

I hope my description is reasonably clear.

Any advice would be appreciated.
