so i can move a e2k server from one ad domain (123.xyz.com) to another 
(abc.xyz.com) and connect the mailboxes to users in the second domain without 
any problems?

Yes the settings to the mailboxes will remain the same like x-400 etc.
The only change would be that each user would have a new email address
and set it as a primary address.  Active directory doesn't have got to
do with these things

Very easy,  Just add the new domain in the recepient policies of
exchange (go to exchange system manager, recepient policies, default
policies and properties) and set it as a primary domain.  Set the users
to replicate with the policy and that's it.
