Build second server and move mailboxes is how we have been doing this. It's
slow but safe.

If the old server is the first Exchange server in your domain, there are
additional tasks you must complete before removing it. Details are on

The best method is to connect the new exchange server to existing
site.

To create new priv databases and slowly to move mailboxes from 1
server to another(on user properties exchange task move mailbox).

Do not forget to synchronize public folders between servers.
