This is a known limitation of the Outlook 2001 client. However, may I suggest that you look at the product MS included with their most recent Office versions for the Mac (2001 for 9x & X for X 10.1.x). Depending on the OS you have on your Mac, one of these versions of the Office suite should allow you to accomplish what you need. In fact, IMHO, the Office X applications running on my PowerBook G4 with 10.1.2 is the most full featured, robust Office product I have used. Entourage (basically Outlook/Outlook Express for the Mac) is the mail client, and I find it to be almost identical to Outlook 2000 for the PC.
