Hey.
You should say if you have an exchange farm if so should not be too hard
but ms has an article for remove exchange. Remember exchange is embedded
into AD.
Search TechNet site for removing exchange and read it carefully before
you do.
The steps in general are
Run exchange removal tool, demote as domain controller
Then remove exchange.
Maybe not exactly in that order.

If you want this to be clean remove you should uninstall exchange while
the server is on-line.

How can I remove one of my Exchange 2000 server when its not online?  In
System Manager, there is no delete option for the server.
