If you are running Windows 2003 based AD, you can apply a GPO to the students, and implement a Software Restriction Policy, and prevent them from executing Outlook.exe. HTH. The teachers should be able to use the Outlook fat client, but the students should only be allowed to use OWA. I know it is possible to disable Outlook fat usage on a user level (this is being done in the hosted exchange solution) but I can't find any information about it.
