Exch 2k modifies the AD schema when you install.

There is no way of removing the new Schema keys (at least in Win2K).  So
basically the only way of COMPLETELY removing Exchange 2000 from AD is
by tearing down the entire AD forest and recreating it.

I would use the normal setup - Uninstall option and then follow up with
regedit to ensure all traces are gone. Microsoft Website has an article
titled 'How to Manually Remove an Exchange 2000 Installation' which
details which registry keys to delete.
