You can use the Performance tool to get the current total each morning
and then subtract from the prior day's total.

You can also write a script to do that.

There are a number of 3rd party (i.e., for pay) tools that do this.
Quest MessageStats is the first one that pops to mind.

Subject: [exchangelist] How can I count number of email messages per day
on Exchange 2003?

Hello
I need to get an approximation of the number of messages that flow
through
our Exchange 2003 email system on a daily basis. I can't seem to find a
tool to do this. I have one Exchange 2003 SP1 server with 684 mailboxes
on
it. Thanks for your help.
