Open up the address book (Tools | Address Book) - you may need to expand
the list
then go to its options dialog Tools | Options.  

That window lets you do what you want including removing unused address
books!

 

I suspect that this is what you are looking for!

In Outlook when you click on the "To" button, we many list IE: Global
Address, Contacts, All Contacts. I would like to get rid of the lists
except for the GAL and Contacts. 

Does anyone know how to do this?
