Just random users have their F/B info not showing up when you create a meeting 
request.  Not everyone has this issue, it seems pretty random.

When you create a meeting request and you select some users some show up as 
having /////////// show up as their F/B info.  What i'm finding out is majority 
of these people are Mac/Thunderbird users.  There are a couple Outlook clients 
sprinkled in there as well.

We only have one server so this isn't a replication issue across multiple 
servers.

I'm not seeing anything that sticks out to me in the Event logs.

forced to open the mailbox using the /cleanfreebusy switch from an outlook
client for them - if they don't have Outlook available.  I don't think
Entourage has a switch (I ust looked, but cant seem to find one) and Im
comfortable sayin Thunderbird doesn't.

But from your description, I get the feeling this is a more global effect
than just a few individual users where free/busy doesn't show quite right.
Is that right?  Can you give a few more details on how the problem presents
itself? Is it some appointment are not present, or they get the gray
hashmarks in the free/busy lookup?
If you create an appointment with multiple attendees, what do you see for
each of them?  
What if some of them are on different servers?
Is there anything odd in the event logs on either the Exchange server in
question or the workstation (in the case of Thunderbird I guess)?
What happens if you move the user to a different server?
What if you move them back?
Create a new user? 
Move that new user?
Move them back?

Just a few steps to get things rolling I guess...
