Depending on the version you're running, create either a Custom
Recipient or Contact with the outside address, then set up forwarding to
that object.

Subject: Forwarding Emails
Hi,
What's the best method for forwarding emails to an outside source on
Exchange?
I read some where that I should create an new account, adding the
persons external email and making it the default, then forwarding the
email to that new account will send the email to their external
account??? If this is the case am I leaving something out as I have done
this yet nothing gets sent to them.
