you shouldn't experience any problems as the extra schema items will just
sit there not being used. If at anytime you reinstall exchange 2k it will
start using them again.

In the event that I do uninstall Exchage 2k after it has
extended the schema will I experience any weird problems?
I also have the system state backup (prior to Exchange
installation) just incase I have to perform a authoritative
restore.

Thanks for your time.

No, it won't. And that happens with any application that modifies AD's
Schema.

When Exchange alters the schema on the DC during installation on a member
server will it reverse the process when uninstalled? Thank you for your
answer.
