The simplest way of doing this is to install the new server in the
existing Exchange 5.5 organization and then move them mailboxes over,
replicate and rehome any public folders, configure any connector that
are needed.

Leave the old server up and running and this will allow for automatic
updates to the users Outlook profile when they launch Outlook next time.

Hope this helps

Subject: [exchangelist] Exchange 5.5 Question

I have been unable to find any documentation on how to migrate Exchange
5.5 to a new server where the new server is a different name. Does
anyone out there have any docs or have you run into any that might help
me? Thanks in advance for your help.

Thanks for your time and consideration.
