Larry The simplest way of doing this is to install the new server in the existing Exchange 5.5 organization and then move them mailboxes over, replicate and rehome any public folders, configure any connector that are needed. Leave the old server up and running and this will allow for automatic updates to the users Outlook profile when they launch Outlook next time.
