I've deployed Exchange 2007 on Windows 2008.
Whenever possible, that is what I do.
Windows 2008 is quite stable.

Thanks to all who provided their inputs.
I am not able to get anyone who has implemented exchange 2007 on windows
2008, in fact Microsoft consultant guys told me that many big companies in
India have implemented on windows 2008, I asked for reference but so far I
have not got it. I am waiting from past 5 days.
Will let you know my decision and reason for it.

Let's retry that. my previous attempt didn't go through, probably because my
s/mime signature. Here's the message I sent, without the signature this
time:
We are on Exchange 2007 SP1 on Windows 2003 64 bits here for at least 7
months now. No problems at all! Deployment went smoothly and maintenance.
what maintenance??? This server is rock solid since I fired it up. The only
problems I have are with GFI MailEssentials (the spam filtering system we
are using) that seems to be a bit buggy on Exchange 2007.
We could have wait for Windows 2008, but we didn't want to pay to debug at
the place of a company located in Redmond.

Subject: [ExchangeList] Exchange 2007 on windows 2003 64bit or 2008 64 bit
Hi,
we plan to implement exchange 2007 64bit in a cluster single copy. But we
are apprehensive about going on windows 2008 OS. I am not sure about the
advantages of exchange 2007 on windows 2008. More security is not a major
criteria for me to decide on this. Apart from this how stable is windows
2008. We need to host at least 8000 mailboxes in a cluster, so any unknown
issues will be a real pain.
In fact we have not used windows 2003 64 bit either. We are currently running
on exchage 2003 on windows 2003. Hence thought of taking some inputs from
wise people.
Can you please provide your inputs on exchange 2007 on windows 2003 64 bit
or 2008 64 bit ! Which one is better and why do you think so.
