As far as I remember, it's not supported, or even a good idea, I have
however done it in the past on a test machine in the lab with no
apparent issues, I did re-install exchange again after the demotion.

The Exchange server is a DC; any experience with demoting while an
Exchange instance is installed?   I'd love to get AD off there.

 Yes I agreed to most of that, the point I was making was about the
exchange server itself. No file level AV on an exchange server.

2 DCs one is the Exchange server. As well as what I reported below the
Exchange server had EventID 1126 in Directory Service; "unable to
connect to global catalog".   Created a GC on the Exchange server and
everything appears to be working. But what I want to know is what
happened the GC on the other DC?  Or why couldn't the Exchange server
see it.

Is this the only DC? What's in your event logs?
