Exchange organization has nothing to do with the SMTP domain name. Make sure your MX records are updated in the DNS servers are updated. Exchange server name has no impact on site addressing. Only the site addressing decides the email address stamping for the recipients. Check you Exchange IMS connector to make sure it is configured to receive mails for the new xxxxx.com domain. You can verify this in the Routing tab. If the new domain name is not yet added, add it and set to Inbound. You can do this by going to Site | Configuration | Site Addressing in the Exchange admin. Edit the SMTP address and change the domain part. this will update all recipients automatically.
