Note: your Exchange AV will need to use VSAPI and not MAPI to do it's
scanning for this to work.

They are trying to determine if there are employees that don't access
their mailboxes at all.

        As far as I know, read vs. unread is a MAPI property and is only
available per item.
         
        What is it that you are actually trying to accomplish?
