As said by gill

an offline backup is when the services are stopped and u take a backup of
your server and an online backup is when the services of exchange is up
and running and the store is mounted.

In additon in an online backup the log files get purged but in an offline
backup the log files does not get purged..

To add more... Offline backup is always consistent/clean shutdown and an
online backup is inconsistent/dirty shutdown, which means it requires some
log files to mount the store..
