Probably some filter along the lines of:
(&(objectClass=Person)(objectCategory=User)(mail=*)(homeMTA=CN=Microsoft
MTA,CN=SERVERNAME,CN=Servers,CN=First Administrative Group,CN=Administrative
Groups,CN=ORG,CN=Microsoft
Exchange,CN=Services,CN=Configuration,DC=domain,DC=com)) would do it.

Get adfind from www.joeware.net

Adfind -b DC=brnets,DC=local -f "(mail=*)" name

Now, the above includes everything with an email address (users, public
folders, groups). If you just want users, then you'll need to work on the
query just a little bit.
