I would recommend not using a catch-all. We tried it here and found that
if someone misspells an address, they would not know there was a
problem, I found myself forwarding way too many emails. I'd rather have
the person get an NDR, see their error and retype the adx then to figure
out where mail should go...I did want to read all those mails

You can create an SMTP Event Sink to handle unresolved recipients, here
is a link from the Microsoft Knowledgebase that explains how this is

I personally would recommend you look at Mailbasket from
www.turbogeeks.com

In the process of commisioning an exhance server for a domain, I want
all mail not specifically addressed to a mailbox to goto a single
account e.g.hostmaster.
