1st Exchange Server Removal

I am in the final stages of moving mailboxes from our original exchange server 
to a new box.  Once this is finished I would like to uninstall exchange server 
and then use the box for another purpose, leaving Windows 2k adv server on it.

Are there any things I should be aware of outside of just flat out uninstalling 
the 1st exchange server?   Anybody have a recipe for this process.
