I believe it is so:
animal rights: animal is the adjective describing the type of rights we are
talking about, rights FOR animals. Also...human rights...rights FOR humans.
(We do not say people rights).
animals' rights: animals is the plural noun which possesses rights, the
rights of animals, but rights are not possessed, they are a function of
social behavior FOR animals or humans or what have you...
Please let me know if this needs more explanation and I will do my best!
