[etni] Composition question

Are there guidelines as to which Hebrew words (written in Latin letters, of
course) are acceptable in a composition? Apart from the obvious words that
can be found in a dictionary anyway, like "Kibbutz" and "Knesset", is the
word, "Shabbat" accepted when referring to the Jewish day of rest as opposed
to just Saturday?
