Could do, if we really wanted to be able to gesture using un-modified button-3. 
But I'd much rather stay with default gtk right-clck behaviour.

There's no such thing. Each gesture has its own setting for button(s) and 
optional modifier key(s), in its "button" field (editing that shows "press 
button" but it accepts >= 1 button with any modifier key(s)). Those settings of 
course may be, and in normal usage probably would be, the same for all 
gestures. ATM the default values are more for demonstration purposes.
