And apologies to others while I try and help Sean - so
please just hit the delete key now.

I rather suspect the answer lies in your own mail server.
When I initially set up our Windows 2000 Server along with
Exchange 2000 Server, I had terrible problems getting the
mail side set up correctly.  Some mail would arrive in plain
text, and other messages would get converted to all manner
of things.  In actual fact, I ended up having to pay
Microsoft for a support call, and finally we got the issues
resolved.

Thankfully, we have since upgraded to 2003 Server &
Exchange, and all is still well.  (Knock on wood)

I suspect the answer lies in the "Content Type".  I have
copied your good and bad message headers below.  Look for
++++ (Four plus signs) at the beginning of the line showing
the content type.

The good one shows:- Content-Type: text/plain;
charset="iso-8859-1"

The bad one shows:- Content-Type: text/plain;
charset="utf-8"

I could be a million miles wide of the mark, but hopefully
it's something to show your I.T. staff.
