I have a harness maker in Idaho Falls, Idaho who makes harness of quality.
He will make them according to your specifications, brass, or stainless
spots  and trim. here is a picture that shows his work, on a set of draft
style harness with a yankee britchen.  He made them for me according to the
specifications I gave him. The hames and spots are all stainless.
