Assuming you refer to externally available sidebar
templates (see also the DokuWiki wiki templates page):

The easiest way to hide the sidebar on certain pages
is to add some php tests in the sidebar rendering
code.

However, I fail to see the usefulness of this. Perhaps
you simply want an "admin" sidebar with sensitive links,
and another one with only links for the regular visitor.
In that case, the straightforward dokuwiki approach
is to use namespaces. Just use an ACL-controlled
namespace with a dedicated sidebar for the admin.
