No. You should be able to assign 1 instance, then assign the outputs of
different tracks to that instance. The only time you need two separate
instances is when you want different audio fx on the synth sound. Now,
perhaps with some synths, you may need an instance for each track, but I
don't think that's the case...Just brainstorming.

don't you have to install a second instance of the VST plugin, so you have
two separate version of it running on one project.

Yes, on first track I chose the channel 1 and on the second track I chose
the midi channel 2 and it is still the same.

Yes,I know but when I do it the softsynth is playing the same sound on each
track.
And when I change the patch on this softsynth on each of them there is the
same sound

You assign the outputs of the track to the softsynth you want to use.
