I am at the stage of getting my creation printed and the print shop has responded with a request that the document be:-

/The files/artwork need to be supplied at 300DPi @ 100%, with *crops and bleed included. Don't send as spreads, just one pdf per page. */
/**/
I am not understanding the crops and bleeds and how they can be incorporated.

I am using Ovation Pro on Windows.

Have a look at the commercial printing section of the manual.

Roughly speaking, you print your e.g. A4 document to a "printer" with a page size somewhat larger than A4, and tell OP to allow the pages to bleed and to add crop marks. If you have any pictures that should go over the page edges then you can enable the pasteboard (view menu) to get that right.
