A quick test suggests DirectPS (printed to AcrobatDistiller v4) is not editable. But switch off DirectPS and you get an editable PDF. If this is documented somewhere, then my apologies.

What springs to mind, is fonts, either the type 1 / type 3 setting (in direct PS choices) or font substitution in the printer driver, which ISTR direct PS should obey.
