That surprises me. The predefined Black colour in ArtWorks is a CMYK 
colour and only appears on the Black plate. I presume you have not 
used "Registration black" in ArtWorks, which does appear on all plates 
(both in AW and in OP). If I draw a single shape in the standard Black 
in ArtWorks and import it into OP, then it is shown on the Black plate 
only. Try that to see what happens. By the way: You can spoil it by 
applying a colour processing in the wrong colour model in OP and once 
applied there is no way to fully remove such a colour processing.

If you use an RGB colour definition for the black colour in ArtWorks, 
then it does indeed show on all plates in OvationPro. However, in 
ArtWorks, even an RGB black is separated to the Black plate only 
(subject to the separation curves used). OvationPro looks wrong in 
this respect. The default colour separation curves (in 
!ColSupp.Resources.cmyk.Typeset) may be the culprit here. As far as I 
can see the UCR (undercover removal) curve only removes about 50% of 
the ink from the CMY channels for 100% generated black. That might 
lead to a lot of overall ink for separated RGB blacks. If you know 
what you are doing you can edit these curves. They are in CC's 
separation curve format and can be edited using SepEd2 (comes with 
Impression, ArtWorks and the TurboDrivers).

It makes a lot of sense. This is precisely what the "Overprint" option 
is there for in ArtWorks. To prevent a shape from knocking out the 
background, select it, go to the fill tool, click Menu over the fill 
and line colours respectively and enable "Overprint" in the colour 
menu. This is an object-level option, so you need to do this for each 
object. By the way: If you create text in ArtWorks, then it is 
automatically created with "Overprint" enabled.
