[COMP] e-mail tapping/regulation

I am relatively new to PCs, but have a difficult question that I would like
to answer. I work for a company whose computers are all PCs on a network.
There has been a lot of restructuring among employees in the last few months,
many of whom have chosen to leave. The atmosphere is such that there are a
number who have expressed concern that their e-mail is being tapped (consider
gender grievance/lawsuit as part of the equation). I want to know if there
is any way to determine if my e-mail is being tapped. I know that if I right
click on the task bar at the bottom of the screen, I can pull up the
processes that are currently running. Here is a list of files that I have
identified to be running on my computer, minus a few that I don't know if
they only run when certain programs are going (or other factors that may be
involved). Is there some other location that I might be able to find out if
this is the case?

Can anyone tell me if any of these are recognized programs to regulate or tap
into e-mail or keystrokes made on a computer? Is there a website or some
other location I can learn more?
