Well, the default installation of Apache will basically setup a basic
(but quite complete) web server for you.  I believe redhat stashes stuff
in /home/httpd.  

As for the startup stuff, I don't use Gnome, so I wouldn't know, but
there ought to be a "start items" folder or something similar somewhere in
your home directory under .gnome (?).  It's analagous to the Startup
folder of the Windows Start Menu.  And for changing your resolution, look
for the option in XF86Setup, or if you're daring, edit /etc/XF86Config
manually. :)  (If things are configured correctly though, and multiple
resolutions are configured, you can switch between them by simply pressing
CTRL ALT + or - (the plus or minus on the numeric keypad) while in X.
