How is your February going so far? We had some pretty bad weather here a week
or so ago, along with some other states. Really bad tornadoes. Crazy for
February. So far it's been unseasonably warm here, and the grass is growing,
ugh!

Today's Recipe:
Cajun Catfish
4 Catfish fillets (4-oz)
1 tb Fresh lemon juice
4 ts Cajun Seasoning
Vegetable cooking spray
Lemon wedges (optional)
Recipe Directions:
Brush both sides of fillets with lemon juice, and sprinkle with Cajun
Seasoning. Place fish on a broiler pan coated with cooking spray, and broil 5
minutes on each side or until fish flakes easily when tested with a fork. Serve
with lemon wedges, if desired.
Today's Tip For Cooking Fish:
As a rule of thumb, cook fish about 7 to 10 minutes per inch of thickness.
