That is true. They haven't invented a turn-key laptop based on JFW. It would
be nice to get a laptop again, but the last Dell I had that broke a few
years ago required a fair amount of sighted help before windows came up to a
point where I could just put in the CD for the screen reader and start
installing stuff. Mine came at the point in the Windows 98 install where you
enter the product key and regional settings and stuff like that.

While I think it would probably work, its probably a bad idea. The point of this product is that it is a turn-key solution. Once you start modifying it a lot, yo would not get support from anyone - its very unlikely gw micro will provide support when you put the competitors software on it.
Of course, there is also the danger you get with many of these systems which use compact/mobile components that JFW may simply not work or not work reliably while window-eyes has been tested and possibly patched to support the hardware, which is often a bit non-standard due to the need for compactness and mobility.
