Beth, I have to argue with you, gently. Water has minerals by nature. Few people have drunk distilled water since humans evolved. Even rainwater is not mineral free, and stream/river water surely is not, neither is well water. In fact, distilled water is dead when it comes to making drinks like coffee, tea or brewing beer. If you used distilled water for any of those, the results would be a taste disaster and the bad taste police would come beat you with wet noodles...organic ones, of course

Part of the problem with distilled water is that some of the volatile chemicals that could be in the water are evaporated along with the steam and recondense in even more concentrated form in the collecting tank. The result is that you get rid of many things, but you could actually be concentrating some volatile chemicals.
