Hi Beth, I tend to not like pods because the coffee is preground and I do not know how much exposure to the air it has had before being sealed into the pod. I grind and pull the espresso shot within seconds of one another as you heard, with espresso freshness is everything because the extraction process pulls everything out of the ground coffee and if there is oxidization, the result will be more bitter than if there weren't any.
