Why not drink Atkins chocolate milk?  It is very low carb (for you Maria) and 
good cold - the problem with it is that it does not hold heat well, although it 
is rich and thick and good for hot chocolate for about a minute.

Unfortunately, most soy milk products are very sugary and not recommended for 
diabetics.  You could get soy milk that is totally plain and use a bit of 
unsweetened cocoa and some splenda and stevia and make it, but it would be far 
higher in carbs than the Atkins brand chocolate milk.
