I have a carrot cake that takes some short cuts and is still very tasty. It
uses baby food jars of carrots. If you ever want that one Marilyn, let me know.
Of course by then you'll have found your kitchen items. (smiles)

I made some fudge for my new boyfriend for Valentine's Day. He'd
complained that he didn't get any fudge at Christmas time. I made my
own sweetened condensed milk for the fudge. It came out tasty but
grainy because I couldn't find my hand blender or big blender. There
must be a few kitchen boxes still unpacked. I beat the hell out of
it with a fork, but the results weren't quite what I wanted. It got
eaten anyway.
Then, for Dennis's visit here now, I made his favorite cake... carrot
cake. It came out well, but I spent about 2 hours grating a bunch of
mini carrots on a hand grater. I couldn't find either the food
processor or salad shooter. If I'd known I would have to hand grate
them, I've have at least bought the big carrots. Sigh... a labor of
love. We are enjoying the cake though. It was worth it.
I've spent almost all of 5 months in Las Vegas taking a course at
Choice Center Leadership University and starting this new
relationship. I have been here very little to get more unpacking
done. I've got a lot to do yet... but am especially anxious to find
the rest of my kitchen stuff.
