The back isn't as meaty as the breast, for one. And if the legs are still
attached, you will be able to feel that they are backward when you have the
chicken breast side down. Also, the wings will be lying flat, if you have it
breast side up.

Subject: [blindcooks] Chicken, breast-side-up?
How do you know for sure which side of a whole chicken is the breast and
which is the back? I made a delicious recipe tonight of a simple roasted
chicken and stuffing, all done in a skillet with the stuffing cooked outside
the bird and finished in the pan while the chicken waits to be carved. The
problem is that tonight makes about four times now that I have placed the
chicken with the breast side down when it should have been up. So is there
a tactile way to tell which side is which? Any tips much appreciated.
