There are some annoying things that the gray-scale does as you've already
noted.  My usual practice is to optimize the settings and save them under a
setting file called "current."  Scan  approximately 10 to 12 pages and check
the spelling confidence rate.  Discard the pages, scanned pages, switch to
Gray-scale, 400 DPI and no speckle removal.  Scan the same 10 to 12 pages
once again.  Check the spelling confidence rate.  Then, and only then, take
the best setting.  I also generally read through the 10 pages to find common
errors Etc.  If I don't like the Gray-scale setting, I can always switch to
my "current" setting file.

I have received mixed results with Gray scale and usually just scan in
static or what the optomizer determines.  One thing I noticed is in Gray
scale it likes to glue words together.  Which canget very annoying as
youcansee.
