The point I was making is that text (where applicable) is best for blind
users. Of course a computer will always have graphics for sighted people
but it will always be easier for blind people to read text rather than
graphics. I don't think maps would be suitable to turn into text although a
flow chart certainly could.

I certainly disagree with the notion that text is best. There are many
times when blind people benefit greatly from graphics, whether it be
understanding a flow chart, a tactile map or countless other things. Text
is often very good, but diagrams can be even more helpful. I think it very
important that people have the skills to read them.
