Just to add.
You can make text documents from pdf using Omni page 14 and above. I think a
similar function is also in Fine reader 9.

I don't know much about daisy format, but can add the following to Tim's
reply.
It is also possible to convert PDF documents to HTML. I think adobe did
have an online tool (which is free) to do this, but I am unsure if adobe
still provide it. If the adobe tool doesn't exist, there are other tools
which you can install on your computer for this.
Thos PDF documents which have come from a scanned document (so have the
data stored as an image) can still be read if you use some OCR software
on it. I am quite sure that omnipage pro has this feature (it could
output to various formats, MSWord, RTF, etc), I am not so sure how many
others have it.
