     A star like this will become redder as it fades as measured by
photometric color, that is the B-V (or some other temperature-sensitive
color-index) will increase when the star is fainter.  However, one's
perception of color is dependent on several factors, not least which
is how bright something is.  The photometric color change (I would 
suggest) is negligible throughout the cycle, so any change in apparent
color is all in your eye/brain.  In general the colors are going to
be stronger when the star is bright.
