The NSW Writers Centre runs a few 1 day workshops in this area.

In February, there was a course in publishing children's books, and I
remember seeing an ad for an illustration course, but they are no longer
listed on the site.

The centre is usually open to providing advice or connecting you with
someone who can provide advice. Depends who you get on the phone when you
call.
