Word has always used double backslashes for directory naming in fields.

Found the solution.
Unlike describing the path of a normal file in the file
manager or at the command prompt, Word 2000 required
the use of double back slashes in the file path.
So:
{INCLUDEPICTURE C:\\PICS\\Logo.bmp" \* MERGEFORMAT \d}
works, whereas the traditional
{INCLUDEPICTURE C:\PICS\Logo.bmp" \* MERGEFORMAT \d}
does not.
