What I think happens is:

You have a style. It shows up in the Styles Pane.
You manually override part of the style (ieg, make a word bold, change a
para setting, etc). It shows up in the Styles Pane as a new style. You
can then apply that to other words/paras (which you generally don't want
to do, so be careful abou that!).

You can remove the new style by removing manual overrides - use
character styles, etc. It's actually a good way to make sure you're not
manually overriding stuff.

You can also change the combination of styles showing by clicking on the
Show dropdown at the bottom of the Styles Pane.
