Don't let them give you such a hard time.

Despite its much dreaded supposed "Friday Mode" - this is
more about the way that people keep thrashing at everything
to try and celebrate POETS day, running too many
applications at once and using up all the system resources,
because they can't be bothered taking the two to five
minutes needed to close down applications such as Word
(clearing out its temporary files cache) and backing up
mission critical files (or checking if there is any paper
in the printer and fanning that paper first so that it is
less likely to jam) before moving on to do major print runs.

Word is far more capable than many care to let on.

That said, where I think you will find the answer to your
questions is in the printer drivers and not in the
application itself.

Go File > Print.  Set the parameters of the printer driver
in terms of doubling up pages on an A$ sheet and trim marks
using the driver for the real (physical) PostScript printer
that will be used at the print house.  Then print to file.

Drag and drop the resulting file to the Acrobat Distiller,
using the output quality settings you prefer - and Acrobat
should turn that file into a PDF with everything that you
were asking for.

(Note: In Windows environments, I have had to change the
resulting print file extension from .prn to .ps for the
above to work.  A doddle really.)

Sometimes, you can also simply set all of those parameters
in the Distiller or Acrobat virtual printer (driver) and
Bob's you're Auntie's husband!

So, just like heading out for dinner on a Friday night: the
answer is in the driver.  Word is just the passenger,
giving the driver all of the directions.
