Habit, I think, and the result of years of Microsoft marketing practices.
Many educational institutions are beginning to make the switch, to save
licensing fees and to allow students to legally use the same program at
home as they use at school/uni.
Fortunately, for most purposes, using OpenOffice.org to produce
documents and then saving them into a .doc format for final submission
works fine.
